Hi Cooks!
To ensure you don't become one of the unfortunate victims in our quote of the month (see below), Cooks Academy has put together a bigger than ever range of cookery classes and courses for Autumn 2006.  With the added facility of our new Hands On Kitchen we've introduced new hands on classes such as Italian Workshop on Sat 7th Oct; an 8 Week Beginner's Course starting on Thu 12th Oct and a Soups & Casseroles Workshop on Sat 21 Oct.  Other new demos include Vietnamese and for those of you needing a quick fix, Quick Midweek SuppersCooking for Blokes is back on Oct 6th and our 4 part Essential Seafood Course which is now sold out for July, will be starting again on 5th Oct.
Beginners Hands on Lessons
Cooks Academy has had a lot of enquiries over the last year about evening hands on lessons.  With our new workshop we're delighted to launch this new 8 week course starting in October entitled Beginners Cookery.  So if you're interested in getting stuck in read all about it by clicking here......  Places are limited to 18 so book early.

Demonstration Courses for Autumn 2006
Its time to start thinking about culinary courses for Autumn.  For those of you interested in daytime demos our ever popular Quick Entertaining is back but in a different guise - Mediterranean Flavours.   Ever walked into a wholefood store and wondered how to cook with all the weird and wonderful ingredients there?  Or indeed what their nutritional values are?  Green Living solves that problem.  Start from scratch with Basic Cookery starting in September?  Or Quick Entertaining in the evenings, also in September
Kids' Cooking - Yummy Parties

Recipe of the Month - Meringue Roulade with Strawberries
A Super Summer Dessert -  easier than you think           Serves 8

Ingredients
4 large egg whites
225g caster sugar
1 punnet strawberries
25g icing sugar
300ml cream, whipped

Method
Line a swiss roll tin with baking parchment.  Whisk the egg whites and half the caster sugar together in a bowl until the mixture resembles snowy peaks.  Gradually add the remaining sugar, continuing to whisk for a few more minutes, until it forms stiff peaks.  Spread the mixture into a swiss roll tin, lined with parchment paper and bake for 20 minutes in an oven preheated to 180°C.  Remove from the oven and leave to cool.  Turn the roulade out onto a sheet of parchment paper (sprinkled with icing sugar if preferred).  Spread the whipped cream onto the roulade followed by a layer of strawberries.  With the longer edge closest to you, roll the roulade over like a swiss roll.  Dust with icing sugar and garnish with strawberries. - Yummeee!
