Hi Cooks!
Happy First Birthday Cooks Academy!
In May we celebrated Cooks Academy's first birthday. A big thank
you to all our clients, family and friends who have supported and
encouraged us, been to our courses, brought along friends and then come
back for more.

Billed as the culinary event of the Summer, A
Taste of Dublin in Dublin Castle, takes place from 22nd to 25th June.
The list of participating chefs and restaurants reads like a Who's Who
of the culinary world and includes Anthony Worrall Thompson, Darina
Allen, Richard Corrigan, Kevin Dundon, Derry Clarke and our very own
Vanessa Greenwood who will be in the Chefs' Theatre on Saturday 24th at
9pm and Sunday 25th at 7pm. Book tickets.
New Hands On Kitchen
This summer we will be opening a second state of
the art kitchen here at Cooks Academy. Capable of taking up to 20
students for practical lessons, it will be primarily used for our new Professional Certificate Course. The new SieMatic kitchen features multiple cooking stations and is fitted throughout with Siemens
appliances, ensuring a new dimension to hands on classes from
September. Stay tuned because we'll be introducing new practical
courses towards the end of 2006 and into early 2007.
Yummy Parties are back
Our enormously popular Children's Cookery
Workshops with Den TV's Aoileann Garavaglia are back in July and
August. Yummy Parties are a great way to get your child cooking
and appreciating good wholesome food. For more information visit

August Demonstration Evenings
Looking for something to do in Dublin this August? Join us for some great one off ethnic demos including Vietnamese, Thai, Thai-French and Indian. Our Confident Barbecue
classes have been so successful we've put another date on for Thursday
3rd August. And Rozanne Stevens will be hosting one of her very
popular Vegetarian and Wholefood lessons on 15th August.

Reap the rewards of homemade Tapenade. Try this recipe - you'll love it and its easy.
Ingredients Serves 4 4 thick slices baguette 175g/6oz pitted black olives 4 tinned anchovy fillets 2 cloves garlic 4 tbsps extra virgin olive oil 6 tomatoes on the vine, very ripe 1 small bunch basil 1 small red onion Salt, pepper and sugar Extra virgin olive oil Method Cut the bruschetta into large diagonal slices. Brush with extra virgin olive oil and place under the grill for a few minutes. Next, liquidize the olives, garlic, anchovies and extra virgin olive oil in a blender. Dice the tomatoes into small cubes. Add salt, pepper and a pinch of sugar to season. Dice the red onion very finely and chop the basil. Add to the tomatoes. Spread tapenade mixture onto each bruschetta and top with the diced tomato mixture. Serve immediately.
