As part of Dublin City's Festival of Russian Culture 2012 enjoy some traditional Russian hospitality and pick up some great culinary tips at this exclusive hands-on evening class in Cooks Academy. Learn to cook Russian dishes fit for a tsar and pick up some delicious recipes to discover the gastronomic delights of Russian life.

Basic Cookery Course
Join Cooks Academy for our highly popular confidence building class. Learn how to cook simple recipes and build up your basic skills. You’ll be whipping up your own desserts, soups, casseroles and even bread with minimal fuss. We’ll teach you all the basics starting with easy main dishes that are real favourites. Educating you as to which ingredients to stock at home while inspiring you to cook up something nice each time your enthusiasm grips you.

Butcher Shop
You won't learn to be a master butcher in our 2 and a half hour workshop for meat matters but you will learn some neat tips and tricks of the trade on how to prepare your own cuts. Find out which cuts of meat suit particular cooking methods, meat preparation aswell as standard meat cooking techniques such as searing, frying, grilling and slow roasting.

Deep south, USA. It's a place rich in culture and bestowed with wonderful cuisine. Cajun and Creole cuisines are healthy and fun to cook. So head to South William Street for some seriously spicy and tantalising cooking. You'll even be speaking like Bubba Gump by the time you leave!

Chinese Workshop
Of all the ethnic cuisines available on these shores perhaps that which has been done the biggest disservice is Chinese. On our Chinese Workshop, you'll learn some great Chinese dishes, easy to prepare, nutritious and very, very impressive for entertaining. Of course China is such a huge country - it would be impossible to cover everything in one evening but we'll get you started and make sure you walk away with a fistful of great recipes that won't let you down together with all the insider info on typical Chinese ingredients and where to get them.

Chocolate Making Workshop

Cook Asia!
Welcome to the Far East! Well not quite, but this is as near as we can get to it in Dublin without burning some serious quantities of carbon!. Join us at Cooks Academy for some seriously cool and healthy Asian cuisine. We'll be guiding you on a culinary journey through the paddy fields of Thailand, Malaysia, Indonesia, Cambodia, Vietnam and on into China and Japan. Cook Asia! is an oriental fusion of flavours in which you'll learn to use authentic Asian ingredients to make great dishes for family dining and easy entertaining.

Cooking for Toddlers
Trickery and skulduggery - that's what it's all about! We'll help you get your toddler to eat the green bits through a combination of disguise and a lot of whizzing. Cooks Academy's evening demonstration Cooking for Toddlers class is for all those harangued Mums and the odd Dad who want to find ways of getting their toddler on the road to healthy eating. Emphasis is on the move away from processed food to homemade nutritious food. With hints for tempting those slightly fussier eaters, ways of cooking nutritious food fast and ideas for substituting junk with healthy alternatives.

Cucina Italiana is our very own Italian Kitchen cookery course here in Cooks Academy. Italian cuisine is unrivalled the world over for its wonderful flavours and its ability to fit into just about any family or social occasion. Knife Skills
Ever seen those chefs on the TV dicing an onion in double quick time? Think of that reassuring chopping noise as a chef chops through vegetables, their knife hitting the board like a noisy woodpecker! Our Knife Skills workshop will teach you all the tricks of the trade so that you'll be able to chop, slice, dice and peel as well as a professional. Under the watchful eye of our expert chef your instruction will take you through the main types of knives together with fundamental food preparation techniques. Very importantly, with good knife skills, you'll learn about all those kitchen gadgets you just don't need to use. At the end of the workshop you'll taste the dishes you've made. All ingredients and knives for the lesson are provided by Cooks Academy. But you are welcome and encouraged to bring your own knives.

Essential for every budding cook; this basic knife skills course will you the confidence to chop like a professional. Slice, dice and chop under the watchful eye of our expert chefs. Cooks Academy will provide knives but you are welcome to bring your own.

Knife skills level 2
Good knife skills are essential to excel as a cook. In Level 2 we will take you through more advanced techniques, boning, filleting and using your knives to help you excel in the kitchen. Suitable for those that have completed level.

Legends of Lebanon
Located at the crossroads between two continents, Lebanese food combines the sophistication and subtleties of European cuisines with the exotic ingredients of the Middle and Far East. A Mediterranean cuisine, it is naturally an extremely healthy diet. It is rich in flavours and colours, with recipes that are easy to prepare. In Lebanon serving small bites with drinks in a convivial and social atmosphere, much like Tapas in Spain, is commonplace and known as Mezze.
