Profiteroles b

This Recipe Serves 4


150ml water
65g strong white flour
50g unsalted butter
2 eggs
pinch of salt
pinch of sugar


  1. Bring the water, sugar, salt and butter to the boil in a saucepan.
  2. Remove from the heat and add all the sieved flour in one go.
  3. Stir immediately and return to a moderate heat.
  4. Keep stirring until the mixture leaves the side of the pan.
  5. Remove from the heat and allow to cool.
  6. Gradually add the beaten egg and beat well for at least 5 minutes.
  7. The paste should be a dropping consistency. If it is not then add a little more egg.
  8. Pipe into eclairs and bake in a hot oven at 200C for approx 25 minutes until crisp and hollow.
