Goji Berry Granola

Serves 4


150g oat flakes (or millet, rye, quinoa, barley)

3 tbsp slivered almonds
3 tbsp hazelnuts, roughly chopped
2 tbsp wheatgerm
3 tbsp dessicated coconut
3 tbsp sunflower seeds
2 tbsp pumpkin seeds
1 tbsp dried blueberries
1 tbsp dried cranberries (craisins)
2 tbsp date or agave syrup
2 tbsp coconut oil, melted in a small pot
To serve
Rice or soya milk
Goji berries and flaxseed mix


  1. Mix all the nuts and seeds together and dry fry in a large non-stick pan until lightly toasted.
  2. Mix the date or agave syrup with the melted coconut oil. Pour over the oat flakes, wheatgerm and coconut. In a separate pan, gently fry this mixture until lightly coloured.
  3. Mix together the nuts, seeds, dried fruit and oat flake mixture. Allow to cool completely then store in Tupperware in the fridge.

    Serve with milk or yoghurt and goji berry/ flaxseed blend
