150g oat flakes (or millet, rye, quinoa, barley)
3 tbsp slivered almonds
3 tbsp hazelnuts, roughly chopped
2 tbsp wheatgerm
3 tbsp dessicated coconut
3 tbsp sunflower seeds
2 tbsp pumpkin seeds
1 tbsp dried blueberries
1 tbsp dried cranberries (craisins)
2 tbsp date or agave syrup
2 tbsp coconut oil, melted in a small pot
Rice or soya milk
Goji berries and flaxseed mix
- Mix all the nuts and seeds together and dry fry in a large non-stick pan until lightly toasted.
- Mix the date or agave syrup with the melted coconut oil. Pour over the oat flakes, wheatgerm and coconut. In a separate pan, gently fry this mixture until lightly coloured.
- Mix together the nuts, seeds, dried fruit and oat flake mixture. Allow to cool completely then store in Tupperware in the fridge.
Serve with milk or yoghurt and goji berry/ flaxseed blend
