175g fresh white breadcrumbs
2 medium onions, finely chopped
4 sticks of celery, cut into small chunks
450g sausage meat
1 large cooking apple, peeled, cored and chopped
110g walnuts, roughly chopped
1 tbsp chopped fresh thyme
zest of one lemon
½ tsp nutmeg
salt and pepper
- Melt the butter in a large pan, add the onions and celery and fry gently for about 10 minutes or till soft.
- Turn into a bowl and allow to cool.
- Add all the remaining ingredients and season well. Mix throughly.
- Use this stuffing to stuff the neck of the turkey or place it in an oven proof dish and bake for 30 minutes at 180º C or till nicely browned on top.
