Apple and Walnut Stuffing


175g fresh white breadcrumbs
2 medium onions, finely chopped
50g butter
4 sticks of celery, cut into small chunks
450g sausage meat
1 large cooking apple, peeled, cored and chopped
110g walnuts, roughly chopped
1 tbsp chopped fresh thyme
zest of one lemon
½ tsp nutmeg
salt and pepper


  1. Melt the butter in a large pan, add the onions and celery and fry gently for about 10 minutes or till soft.
  2. Turn into a bowl and allow to cool.
  3. Add all the remaining ingredients and season well. Mix throughly.
  4. Use this stuffing to stuff the neck of the turkey or place it in an oven proof dish and bake for 30 minutes at 180º C or till nicely browned on top.
