Chocolate Mousse Cake

Makes 1 cake



300g chocolate biscuits
100g Unsalted butter
400g dark chocolate, finely chopped
4 eggs, separated
125ml single cream
40g brown sugar
375ml double cream (whipped)

Chocolate Glaze

125ml single cream
2 tsp liquid glucose
100g dark chocolate (70%), finely chopped
1 tsp vegetable oil


  1. Place biscuits in food processor and add butter, blitz until it appears like breadcrumbs.
  2. Place in a tin and spread evenly, allow to chill.
  3. Place the chocolate and single cream in a bowl over simmering water. Stir until smooth and combined.
  4. Remove and allow to cool. Add egg yolks.
  5. Place egg white in a bowl and until soft peaks. Add sugar slowly, until glossy.
  6. Gently fold in the whipped cream, followed by the egg white mixture. 
  7. Spoon the mousse over the biscuit and chill for 4-5 hours.
  8. For the glaze, place the cream and glucose in a small saucepan over a medium heat, bring to the boil.
  9. Remove and add the chocolate. Allow to stand for 5 minutes.
  10. Add the oil and whisk until smooth.
  11. Pour glaze over mousse and allow to chill.
