Irish Boxty in the Pan (Bacstai)

Traditional Irish Boxty. Also known as Boxty in the Pan and Bacstai.

Ingredients: Irish Boxty in the Pan (Bacstai)

  • 3 large potatoes (approx 550g)
  • 50g butter, melted
  • 1 tsp salt
  • pinch pepper
  • olive oil for frying the boxty
  • 200g Black pudding, sliced into 1 cm discs
  • 2 cooking apples, peeled, cored and sliced
  • 1-2 tbsp sugar
  • Parsley
  • Sour cream or crème fraîche


  1. Grate the potatoes and place into a clean tea-towel and squeeze out as much moisture as you can. 
  2. Place the potatoes in a bowl and season generously with salt and pepper.  Pour melted butter over the potatoes and stir to coat well.
  3. Decide on whether you are making large or small boxty, then heat oil in a heavy based frying pan and once the oil is very hot, spoon tablespoons of the mixture onto the hot pan (spoon enough mixture for either large boxty or small size)  Flatten down slightly to ensure they cook through. 
  4. Cook over a high heat, turning after approximately five minutes until the boxty are crisp and golden on both sides.  Transfer to a warm oven to keep warm.
  5. To fry the black pudding, grill or fry slices of black pudding for 5 mins on each side.
  6. To make the apple sauce, in a saucepan, heat the apple with sugar (add a dash of water if too dry) and leave to stew for 10-15 minutes.
  7. To serve, place boxty on a plate, and top with slices of fried Clonakilty black pudding, apple sauce and a dollop of sour cream / crème fraiche. 
  8. Garnish with parsley or chives.
