Lamb Koftas


500g mince lamb
2 tbsp ginger garlic paste
1 tbsp garam masala
1 tsp turmeric
½ tsp chilli powder
1 tbsp ground coriander
2 tbsp cashew nut paste
1 egg lightly whisked
Salt as per taste
For the Tomato Sauce
1 medium onion chopped
1 tbsp olive oil
1 clove garlic crushed
150g tomatoes puréed
Salt as per taste
1 tbsp ground coriander
1 tsp garam masala
½ tsp chilli powder
2 tbsp fenugreek leaves
1 tsp cardamom powder
2 tbsp Cashew nut paste
2 tbsp Cream
1 tsp Sugar


  1. To make the sauce heat oil in a pan. Add chopped onions and garlic till onions are soft.
  2. Add ground spices. Stir in tomato purée. Cook for 10-15 minutes. Add water for volume. Blitz to smoother consistency using handheld blender.
  3. To make the koftas - mix the mince lamb with all the spices and form small round balls. Add these lamb dumplings into tomato sauce and cook thoroughly. Add enough water to make sure koftas are submerged in sauce.
  4. Serve them on small round breads (cut in shape using pastry cutter) and drizzle some curry oil around the plate.
