Chargrilled Mackerel with Kachumba

Serves 4

Kachumba is something I love to eat with curry.  It also goes well with grilled fish.

4 Mackerel, gutted and cleaned
2 tbsp olive oil
1 lemon, cut into wedges to serve
1 apple, cored and chopped
1 tbsp lemon juice
4 tomatoes, roughly chopped
½ cucumber, deseeded and roughly chopped
1 red onion, roughly chopped
salt and freshly cracked black pepper

Equipment: Metal Fish Griller


  1. To make the kachumba, toss the apple in lemon juice and add in the tomatoes, cucumber and red onion.  Coat in olive oil and season to taste.
  2. Brush the mackerel with oil and season with salt and pepper. 
  3. Heat the barbecue until it is very hot.  Place the whole fish in a fish grill and grill for 5-10 mins on each side.
  4. Serve with a spoonful of kachumba and a wedge of lemon on the side.
