1 Melon, cut into uniform chunks
1 small red onion, sliced very finely
50g walnut, halved
2 tbsp honey
100-150g cashel blue cheese, cut into small cubes
50g rocket leaves
1 large handful mint, leaves only
Juice of 1-2 limes
6-8 tablespoons extra virgin olive oil
2 tsp brown sugar (or maple syrup)
- In a large wide bowl, mix the lime juice, extra virgin olive oil and sugar.
- Drizzle the walnuts in honey and bake in an oven preheated to 180°C for 10mins, stirring halfway through. Allow to cool.
- Toss the melon and red onion slices in the dressing and place on top of the rocket leaves.
- Before serving, scatter over blue cheese, walnuts and mint leaves.
