Certificate in Practical Cookery - Video
On our fast track Certificate in Practical Cookery you will learn all the fundamentals of cooking within a concise four week timeframe. It combines daily, practical work and Specialist guest lecturers together with theoretical sessions enabling you to become a confident and accomplished cook for the rest of your life. Perfect if you are looking for a professional culinary career, to start your own business or to cook with confidence for friends and family.
At the end of the course you will be thoroughly familiar with classical and contemporary cooking techniques enabling you to start to cook professionally for a living or as a serious amateur. Not only will you become a cook with flair and creativity but you will learn about other aspects of working kitchen operations such as menu planning and stock rotation, together with good leadership and communication skills. There is an emphasis on developing classical cookery techniques that meet the requirements and tastes of today's demanding, food interested consumers.

OPTIONAL EXTRA: E-LEARNING
A key feature of the course is the Course Study Book containing hundreds of recipes. This carefully chosen content has taken over 50 years of continuous development by experts in the field. Now we are pleased to be able to offer all our students on 4 and 12 week courses the added/optional facility of e-learning which enables cloud based learning resources such as worksheets, recipes, videos, presentations etc. to be downloaded to or viewed on to a PC, notebook, tablet or smartphone.
This is of significant benefit to students as it facilitates additional learning in a modern, convenient and fun way either in house, while on the move or away from Cooks Academy. e-Learning is an optional resource and students will be able to opt out at no disadvantage to themselves should they wish.
COOKS ACADEMY FACILITY
Cooks Academy is centrally located in South William Street, Dublin 2, only a few steps from Grafton Street. It is easily accessible by public transport to anyone in the Dublin area and Dublin commuter belt on a daily basis. Accommodation to suit every budget is available and we assist international students or those from further afield in Ireland with their search for suitable accommodation.
The kitchens themselves are state of the art. Cooks Academy moved into it's current location in January 2011 having been located in Dun Laoghaire prior to that. Everyone has their own cooking station with ample space and we pride ourselves on the high standard of equipment and appliances available to each student. The facility is 4,500 sq. ft., filled with natural light and windows north, south, east and west. It is beautifully finished with oak and marble. If you would like to enrol we will ask you to fill out a short enrolment form and pay a deposit of 10% of the course fee to secure your place. The balance of the fees are due six weeks before the course start.
Many of our students travel from near and far to be with us. If you require accommodation in or near Dublin for the duration of the course we have a number of options available depending on your budget and we can help you to get the very best rates locally. A Typical Day on the Practical Cookery Course
No two days at Cooks Academy are the same but each day we aim to provide our students with the best experience in the kitchen.
The normal day usually starts at 9.30am and ends at 4.30pm, with hands-on cookery and breakout demonstration sessions throughout the day as required.
The cooking sessions will cover everything from menu planning and mise en place to discussing the techniques and skills for the day. Our tutors are always on hand to answer any questions from our students. Students then cook several dishes which are presented to the tutors for marking.
Following lunch, the students will often have another practical session with their tutors or guest demonstrators before finishing up for the day.
Cooks Academy has a reputation as one of the most professional cookery schools in Ireland. We have achieved this by ensuring a structured learning environment to our long courses.
We also recognise that different people learn at different speeds and that learning inputs often need to be communicated in a variety of forms and sometimes simultaneously. We ensure that there is adequate time to repeat modules as "Practise builds Confidence".
The typical day contains a variation to ensure motivational levels remain high while providing enough time to make sure everyone gets through the day in a structured way but without taking the fun out of it.
Who's It For?
This course will suit you perfectly if you want to take your passion for cookery to the next level or are thinking about entering a career in hospitality or catering. It teaches you all the fundamentals of cooking enabling you to cook and cater with confidence. You will build a book of many recipes that you can refer to after the course; these will include Fish, meat, vegetable, international cuisines, desserts, soups and many more. You will develop skills to include knife skills, wine matching, jam making, yeast bread, cake decorating and food safety, and more!
You don't have to be considering a career in food and cooking to do the course. Many people do it just because they have the passion and want to bring their interest in cooking to the next level and develop a life skill that will be with them forever.
There is no minimum or maximum age limit.
