Cider Braised Apples

In Ireland we love celebrating Irish Food for St Patrick's Day. Here's a quick, nutritious and totally delicious dessert.

Ingredients: Cider Braised Apples

  • 50g butter
  • 80ml maple syrup
  • 750ml Craft Irish Cider
  • 1 tbsp lemon juice
  • Pinch of salt
  • 2 apples, halved and cored 30ml cream
  • 50g brown sugar
  • 75g nuts (pecans, hazelnut or walnuts)
  • 40g porridge oats
  • 150ml double cream
  • 2 tbsp honey, warm
  • optional: 1-2 tbsp Irish whiskey

Method:

  1. Add 150ml double cream to a bowl and whip until thick, then fold in the warm honey (and a dash of whiskey if using), set aside.
  2. Fry the nuts and oats in a dry frying pan until nicely toasted, set aside.
  3. Place the butter, maple syrup, cider and lemon juice in the pan and heat for a few minutes.
  4. Add in the halved apples in a single layer and return the liquid to a very gentle simmer. Cook for about 15 to 20 minutes, turning the apples over halfway through.  Once the apples are 'just' cooked through remove with a slotted spoon and place on an oven tray.
  5. Bring the liquid to a boil over a medium to high heat, stir occasionally and cook until reduced to a syrupy caramel.  Add the cream and stir until the sauce is smooth, keep warm.
  6. Brûlée the apples on the tray by sprinkling them with sugar, place under a medium hot grill for about 5 minutes until slightly caramelized.
  7. Serve the apple on top of the sauce and sprinkle the nuts and porridge oats around the plate.
