Viva España! Tapas is the collective name for small and delicious mouthfuls of something savoury, served in almost every bar in Spain.

Spiced Nuts  Fried Goat Cheese Croquetas with Sweet Pimenton Sauce  Chorizo-Stuffed Baby Potatoes  Andalucian Shrimp and Spring Onion Fritters

Serving tapas is designed to encourage conversation, because people are not so focused upon eating an entire meal. They may be cold (such as mixed olives and cheese) or hot (such as chopitos, which are battered, fried baby squid) but are usually made from a variety of foods, meat, seafood, nuts, cheese, eggs.

This evening tapas lesson is a snapshot of some of what we have found to be the most popular tapas which you will make from ingredients easily available.
