Cheese, that wonderful food that we all love so much in Cooks Academy.
There isn't a day goes by that glorious Irish and worldwide cheeses are not used in the school. There's a lot to learn about how to make cheese and we are obviously so well endowed in Ireland with its main ingredient which enables us to make the best cheeses in the world.
If you would like to learn the fundamentals of cheese making then come to our cheese making workshop - And who better to give the instruction than master cheese maker Silke Croppe of Corleggy Cheeses in Cavan.
Silke is the recipient of many awards for her marvellous cheeses which can be found the length and breadth of Ireland. This year Corleggy Cheese received a Super Gold Award at the World Cheese Awards in Spain. So roll up your sleeves, get stuck in and reap the rewards!
